Air Fryer Eggplant Parmesan

Well, I promised an eggplant recipe this week, and boy did this one deliver! This super easy recipe took about 15 minutes to prepare, and after 2 15-minute shifts in the Air Fryer (during which time I attended to some computer work), and dinner is on the table!

I love the combination of hemp seed and cornmeal for the breading – it’s light, but has a chewy feel to it that compliments the meatiness of the eggplant very well.

I did this recipe in the oven as well (cooking at 450 degrees as well), and it turned out great (a little more moist, but still equally as good) – in case you don’t have an air fryer.

Air Fyer Eggplant Parmesean
SERVES: 4

1/2c hemp seeds
1/2c Gluten Free Cornmeal
2T Italian Seasoning
½ c milk
2 large eggplants
1 jar tomato sauce of your choice
Dairy Free Mozzarella
Rice or pasta

In a shallow dish, combine hemp seeds, cornmeal, and spices. Set aside.

Slice eggplant into 1” slices. Dip into milk, and after immediately into the cornmeal and seed mixture.

 Lay slices in air fryer. Cook at 400 degrees for 15 minutes, and then flip eggplant over and cook another 15 minutes, or until done.

If desired, broil dairy-free mozzarella on top. Serve with your favorite tomato sauce over rice.
